Pears with Gorgonzola Cheese Milanese Specialty Among Fruit Desserts
Pears with Gorgonzola
4 pears, small, firm, peeled, cut in half lengthwise, cored 1 tablespoon lemon juice, or more as needed 1/4 cup or approximately 2 ounces Gorgonzola cheese at room temperature 2 tablespoons soft butter, unsalted 2 tablespoons crushed walnuts, pistachio or pine nuts

1. Scoop less than a tablespoon of pulp out of each of the pear halves.
2. With a pastry brush paint all surfaces of the pears with lemon juice so they do not turn brown. Set aside.
3. In a small bowl cream together the Gorgonzola cheese and butter until soft and fluffy. Divide among the hollows in the pear halves.
4. Place the pears filled side down on individual serving plates. Sprinkle crushed nuts over pear side facing up. Some nuts will fall casually on the plate. If you wish more nuts to appear on the pear, pat them onto the pear with your hand.
5. Serve at room temperature or chill 1 hour before serving if you prefer. Serve with with a dessert knife and fork.
