Total prep and cooking time: 25 minutes
Serves 6

1. Peel, slice in half lengthwise, and core the pears.

2. Combine the sugar, cinnamon and water in a pot and bring to a simmer on top of the stove until the sugar dissolves.

3. Add the pears to the simmering sugar syrup. This is the point at which the pears begin to poach.

4. Poach the pears until they are slightly translucent and just tender. Take the pan off the heat.

5. Allow the pears to cool down in their syrup enough to handle them. At this point pears can be set to the side to keep, or refrigerated until time to reheat.

6. When ready to serve, remove the warm pears from their syrup and cut them into thin slices lengthwise. Divide among individual plates. Top with whipped cream and drizzle a little of the pear syrup over the dish. Serve warm or chilled if you prefer. The remaining syrup can be stored in the refrigerator, reheated and used over pancakes, waffles or French toast within the week.

May you have 100 years of life, love, health and happiness!
