Simple Olive Oil Salad
Dressings Stand Up to
Vegetables Providing Savor and
Sass in a Minute



These olive oil salad dressings are quick, simple and inexpensive.

The proportions are always the same. For a light main course, dress the salad with a mild olive oil. For heartier fare like beef or game use a stronger flavored olive oil. If your taste runs to extra virgin olive oil, then use it.


Basic French Vinaigrette

4 tablespoons of olive oil
4 teaspoons wine vinegar
pinch of salt
black or white pepper to taste

1. In a small bowl place salt and vinegar. Stir by hand until the salt is dissolved.

2. Add the olive oil and pepper, stir to combine.

3. Pour over any combination of salad greens. Toss gently. Plate salad. Serve.

Dresses 4 individual salads or 2 large salads.



Dijon Mustard Dressing

To the Basic French Vinaigrette add 1/2 teaspoon Dijon mustard to the salt and vinegar. Stir well to combine and dissolve the salt. Then add the oil and black or white pepper to taste.


White Wine Salad Dressing

3/4 cup dry white table wine
1/2 cup olive oil
1/4 cup white wine vinegar, tarragon flavored
1/4 cup finely grated onion
1 small garlic clove, mashed
salt and pepper to taste
sprinkle of any herb you prefer, optional

Combine all ingredients in a bowl. Or place all ingredients in a jar with a screw-top lid and shake until combined. The dressing will keep for a few days covered in the refrigerator. If the olive oil congeals in the refrigerator, let it warm at room temperature for 20 minutes.

Makes approximately 1-3/4 cups dressing.

Serve with vegetable salads, greens, mixed salads, seafood.
