Zillions of olive oil recipes abound. Start off with the simple quick, easy and inexpensive olive oil salad dressings and move into country bread ...Bruschetta with Garlic and Cheese or Olive Oil Dip.

Bruschetta with Garlic and Cheese

Serves 4 as an antipasto or appetizer

4 slices dense country bread, cut 1/2 inch thick
1 large clove of garlic, peeled
1 tablespoon extra-virgin olive oil
1/2 cup thin shavings Parmigiano-Reggiano cheese

1. Preheat broiler. Place sliced bread on cookie sheet. Toast on one side until golden brown. Turn with tongs so as not to burn yourself and repeat on the other side. Watch the bread, it can burn quickly!

2. When the bread is toasted and cool enough to handle, rub the garlic over the top side of each piece of toast. The toasted bread acts as a grater, and the warmth of the bread liquifies the garlic.

3. Brush the garlic side of the toast with olive oil. Some people prefer to use an olive oil mister in place of a brush for this step.

4. Top each slice with cheese shavings. Place on individual serving plates. Serve immediately.
