Italian Chicken with Sweet Peppers



Italian Chicken with Sweet Peppers proves its versatility and quickly prepares in less than 30 minutes.

Like all Italian chicken recipes it is undemanding, adaptable, inexpensive - characteristics helping resist the pressures of rising costs, busy schedules, and today's fast-paced lifestyle. Select a basic olive oil salad dressing recipe to toss over a mix of lettuce and vegetables.

The following recipe is dedicated to all our clients who must multi-task.

Italian Chicken with Sweet Peppers

2 pounds, or 4 chicken cutlets, rinsed, dried with paper towels
salt and freshly ground pepper to taste
2 tablespoons butter, unsalted preferred
1 tablespoon olive oil
1/2 teaspoon finely minced garlic

1/2 pound mixed sweet red, yellow, orange, green peppers, cored, seeded, and cut into thin strips, about 2 cups

1/2 cup dry white table wine
1 tablespoon finely chopped parsley, flat-leaf or curly

Total time prep and cooking: 30 minutes
Serves 4


1. Sprinkle the chicken cutlets with salt and pepper to taste.

2. Melt 1 tablespoon of butter with 1 tablespoon of olive oil in a skillet or frying pan over medium heat. Add the chicken cutlets. Cook about 4 minutes or until golden brown. Turn and cook on the other side about 4 minutes until golden brown.

3. Add the garlic and pepper strips. Cook about 4 minutes. Add the wine. Cover the skillet with a lid and cook about 4 minutes longer.

4. Remove the chicken cutlets to a warm platter or serving dish and keep warm. Sometimes the peppers throw off a considerable amount of liquid. If this happens to you, after removing the chicken cutlets, keep the skillet uncovered, raise the heat and reduce the liquid a bit. Add the remaining tablespoon of butter to the peppers in the skillet and stir until the butter is melted and the peppers are heated through.

5. Pour the peppers and sauce over the chicken. Sprinkle with parsley and serve.

6. Italian Chicken with Sweet Peppers is best served with sauteed potatoes, steamed asparagus, and a tossed salad of lettuce and vegetables. If you are in rush use a bagged and washed salad tossed with one of the olive oil salad dressings.

A scoop of lemon ice cream with a chocolate Baci refreshes at the end of the meal.
