Italian Chicken with Mushrooms

Italian Chicken with Mushrooms works wonders as a family meal on the weekend. Let it simmer as you, your partner and children do errands and sporting activities. It will perfume your home with a tempting aroma calling one and all to the table for conversation and camaraderie. Or make ahead, freeze and reheat when you want a meal in a minute.

This recipe is dedicated to all our clients who must multi-task. Like all Italian chicken recipes it is undemanding, adaptable, inexpensive - characteristics helping resist the pressures of rising costs, busy schedules, and today's fast-paced lifestyle. Use any of the types of olive oil you wish.

Italian Chicken with Mushrooms

1 chicken, purchased cut-up into 10 or 12 pieces, approximately 3 pounds
2 tablespoons olive oil
1 rib celery, chopped fine, use a food processor if you have one
2 large carrots, chopped fine, use a food processor if you have one
1 large onion, chopped fine, use a food processor if you have one
1-1/2 cups mushrooms, sliced
4 oz. dry white table wine

16 oz. whole tomatoes, Muir Glen or San Marzano brands preferred, drain and save the liquid adding water to measure 1-1/2 cups

1teaspoon flour
1 bay leaf
salt and freshly ground pepper to taste

Prep time: 20 minutes
Simmer time: 1 hour
Serves 4 to 5


1. Use a large saucepan big enough to hold the chicken pieces.

2. Add the olive oil to the pan placed on medium heat. When oil is hot but not smoking, add the chopped vegetables and the flour. Cook for 10 minutes, stirring continuously.

3. Add the pieces of chicken, cooking until they are a light golden color.

4. Add the wine and continue cooking until the wine is reduced to a third.

5. Add the drained tomatoes, breaking them up with the back of a spoon. Add the bay leaf. Cook for 1 minute.

6. Reduce the heat. Cover the pan with a lid. Simmer for 45 minutes.

7. Add the sliced mushrooms, cover the pan, return the pot to simmer for 15 more minutes.

8. At the end of the cooking time, if the liquid is too thin, raise the heat and let the pot boil gently until the liquid is reduced to a thicker consistency. This can be made ahead and reheated. Or frozen and reheated when you want to serve it. Or you can serve it immediately.

9. Italian Chicken with Mushrooms is best served with a side dish of pasta or mashed potatoes, and a tossed salad. If you are in rush use a bagged and washed salad tossed with our favorite olive oil salad dressings.

Fresh, sliced oranges or clementines topped with slivered almonds makes a refreshing dessert.
