Italian Chicken with Lemon
Pollo Piccata al Limone

Italian Chicken with Lemon also known as Pollo or Chicken Piccata al Limone is a delcate dish ready in 15 minutes from start to finish.

Like all Italian chicken recipes it is undemanding, adaptable, inexpensive - characteristics helping resist the pressures of rising costs, busy schedules, and today's fast-paced lifestyle. Select a basic olive oil salad dressing recipe to toss on a variety of lettuces.

The following recipe is dedicated to all our clients who must multi-task.

Italian Chicken with Lemon

1-1/2 pounds of chicken cutlets, rinsed, dried with paper towels
1 to 2 tablespoons all-purpose flour
2 tablespoons olive oil
1 tablespoon butter, unsalted preferred
1 lemon, half juiced, other half cut into 4 to 6 thin slices
2 tablespoons flat-leaf Italian parsley, if available, finely chopped
salt to taste

Total time prep and cooking: 15 minutes
Serves 5 to 6


1. The chicken cutlets should be about 1/2 inch thick. Then beat them with a flat kitchen mallet until they are 1/4 inch thick.

2. Dredge lightly in flour at the last possible minute before you start cooking them.

3. Put the olive oil and 1 teaspoon of butter in a frying pan over medium heat. When it starts foaming put in the chicken cutlets. Cook them for 3 minutes without touching them.

4. Turn them. Salt them. Continue cooking for 2 more minutes. They should be golden brown all over.

5. Pour the juice of half a lemon over them. Turn the heat to low. Cover the pan. Cook them covered for 2 more minutes.

6. Take the pan off the heat. Transfer the cutlets to a warm serving platter or individual plates. Add the remaining butter to the warm pan and stir into the pan drippings and juices until melted. Pour the sauce over the cutlets. Garnish with a thin slice of lemon and sprinkle with parsley.

7. Serve Italian Chicken with Lemon with a few roasted fingerling potatoes, steamed green beans dressed with a splash of olive oil and wine vinegar, and a tossed salad. If you are in rush use a bagged and washed salad tossed with one of the olive oil salad dressings.

A small chocolate dipped biscotti and a few hazelnuts caps the meal.
