Italian Chicken Tuscany Style

Italian Chicken Tuscany Style has a number of variations. Another version of this dish Italian Chicken with Mushrooms is made with tomatoes. Still another version with tomatoes and hot peppers. This is a more delicate variation. And like all italian chicken recipes it is undemanding, adaptable, inexpensive - characteristics helping resist the pressures of rising costs, busy schedules, and today's fast-paced lifestyle. Use any of the types of olive oil you wish.

This recipe is dedicated to all our clients who must multi-task.

Italian Chicken Tuscany Style

2 tablespoons butter, unsalted if you have it
2 tablespoons olive oil
1 cup minced onions
1/2 cup minced parsley

1 chicken, approximately 3 pounds, purchase it cut-up into 10 or 12 pieces to save time, although it will cost a bit more per pound. You decide what works for you and your budget.

1/2 cup water
1 cup mushrooms, sliced
3 tablespoons minced fresh basil, or 1 tablespoon dried basil
1 teaspoon fresh or dried rosemary
1 bay leaf
salt and freshly ground pepper to taste
1/2 to 3/4 cup dry white table wine

Total time prep and cooking: 35 to 40 minutes
Serves 4


1. Use a large saucepan big enough to hold the chicken pieces.

2. Add the butter and olive oil to the pan placed on medium heat. When butter and oil mixture is hot , add the onion and cook stirring constantly for 3 to 4 minutes, or until the onion is soft and golden. Add the parsley and cook for 1 minute more.

3. With a spoon move the onion mixture to the edge of the pan creating a circle in which to saute the chicken. Add the pieces of chicken, cooking until they are golden in color.

4. Add the water, mushrooms, basil, rosemary, bay leaf, salt and pepper to taste. Reduce the heat, cover with a lid and return to simmer for 10 to 12 minutes.

5. Remove the lid. Add 1/2 cup of wine, raise the heat to low and cook for 10 more minutes, or until the chicken is tender. If the liquid cooks down too much, you may add a little more wine if necessary.

6. Italian Chicken Tuscany Style is good served with a side of mashed potatoes, and a tossed salad. If you are in rush use a bagged and washed salad tossed with our favorite olive oil salad dressing recipe.

Fresh berries of any type topped with a dollop of cream whipped with ginger and cinnamon for dessert finishes the meal.
