Italian Chicken Saucy Style



Italian Chicken Saucy Style tastes as if you brought take-out from a good restaurant home, but much more inexpensively. On a night you have the energy to cook something as simple as this, your taste buds will thank you.

Like all Italian chicken recipes it is undemanding, adaptable, inexpensive - characteristics helping resist the pressures of rising costs, busy schedules, and today's fast-paced lifestyle. Select any olive oil recipes you wish.

The following recipe is dedicated to all our clients who must multi-task.

Italian Chicken Saucy Style

4 chicken breast cutlets, approximately 1-1/2 pounds
2 tablespoons olive oil
1/3 cup onion, minced
1 clove garlic, minced
5 ounces dry white table wine
5 ounces chicken broth
1 teaspoon cornstarch
1 tablespoon Dijon mustard
2 teaspoons small capers
parsley for garnish

Total time prep and cooking: 20 to 30 minutes
Serves 4


1. Use a large frying pan big enough to hold the chicken breasts.

2. Add the olive oil to the pan placed on medium high heat. When the oil is hot, saute the chicken breasts until golden on both sides. Reduce the heat. Continue cooking the chicken breasts for 5 minutes, turn and cook 5 more minutes. Reduce heat to medium. Salt and pepper to taste. Remove from the pan and keep warm.

3. Add the onion and garlic to the pan, cook stirring constantly for 3 to 4 minutes, or until the onion and garlic are soft and golden.

4. Add the wine. Reduce slightly. Reduce the heat to low.

5. Add the broth and cornstarch to the pan. Stir to combine. Add mustard and capers. Stir to combine. Heat through.

6. Return the chicken to the pan and coat with sauce. Heat through.

7. Plate, sauce, sprinkle with parsley. Italian Chicken Saucy Style is good served on a bed of spinach fettucine or mashed potatoes, broiled tomatoes, and a tossed salad. If you are in rush use a bagged and washed salad tossed with our favorite olive oil salad dressing recipe.

Dessert can be fresh or canned peaches in natural juice, with an Amaretti cookie to round out the meal.
