Italian Chicken Broiled with
Vinegar and Garlic

Italian Chicken Broiled with Vinegar and Garlic showcases the versatility of chicken and its ability to share the stage with other flavors.

Like all Italian chicken recipes it is undemanding, adaptable, inexpensive - characteristics helping resist the pressures of rising costs, busy schedules, and today's fast-paced lifestyle. Select a basic olive oil salad dressing recipe to toss over a mix of lettuce and vegetables.

The following recipe is dedicated to all our clients who must multi-task.


Italian Chicken Broiled with Vinegar and Garlic

3 pound chicken split in half lengthwise for broiling with skin on, rinsed, dried with paper towels
1/4 cup olive oil
1/4 cup red wine vinegar
2 tablespoons finely chopped parsley, flat-leaf or curly whichever is available to you
2 sprigs of fresh rosemary or about 20 dried rosemary leaves

Total time prep and cooking: 50 minutes
Serves 4


1. Place the chicken halves skin side down in a shallow baking pan.

2. In a small bowl combine the olive oil, vinegar, parsley, and garlic. If fresh rosemary is used remove the leaves from the stems. Whether fresh or dry, crush the rosemary and add it to the oil/vinegar mixture.

3. Preheat the broiler to high.

4. Brush the chicken with the oil/vinegar mixture. Place the pan with the chicken under the broiler about 6 inches from the heat source.

5. Broil the chicken, basting occasionally with the oil/vinegar mixture for about 15 minutes. Turn the chicken skin side up and place the pan about 10 inches from the heat source. Continue broiling for 15 minutes. Remove the chicken from the broiler.

6. Preheat the oven to 400F. Then move the chicken in the baking pan to the oven and bake for 10 to 15 minutes basting often with the pan juices. When cooked, remove from oven and let rest 10 minutes before dividing into 4 portions, plating and spooning sauce over the chicken.

7. Serve with a side of mashed potatoes, steamed green beans, and a tossed salad of lettuce and vegetables. If you are in rush use a bagged and washed salad tossed with one of the olive oil salad dressings.

A peeled, fresh tangerine mixed with a few berries and topped with sliced almonds refreshes at the end of the meal.
