You Know Which to Select



Successful baking with olive oil starts by choosing from types of olive oil labeled light olive oil or "extra light" and are readily available at your local market. Among olive oil recipes my cousin bakes homemade Italian biscotti using olive oil. There is nary a crumb left on the plate.

Use the same amount of "light" or "extra light" olive oil as called for in your recipe when baking or cooking with olive oil. So if your recipe for carrot cake calls for two-thirds of a cup of vegetable oil, use that same amount of light or extra light olive oil.
